Peanut soup with potato praline
Ingredients for 12 persons:
For the soup:
- 4 onions
- 3 apples
- 2 lemongrass stalks
- 50g ginger
- 2 litre vegetable stock
- 2 whole garlic
- 1 glass peanut butter
- 150ml sesame oil
- 1 can coconut milk
- 1 pinch cumin
- 1 pinch coriander
- 1 pinch cardamom
- 1 pinch salt
- 1 pinch pepper
For the potato praline:
- 40g butter
- 1 egg yolk
- 200g boiled potato
- 50g wheat flour
- 1 pinch nutmeg
- 1 pinch salt
- 50g breadcrumb
Preparation:
Peel and chop the onions, garlic, ginger and apples. Cut also the lemongrass fine.
Steam the chopped ingredients in a little sesame oil (use not the whole as it will be needed later), they can get even a light brownish colour.
Flavour the mix with cumin, coriander, cardamom, salt and pepper. Fry it for a short time, then pour into the vegetable stock and simmer it for ca. 30 minutes.
Add the peanut butter and the coconut milk and boil it once more.
Mix it smooth with a kitchen blender adding the remaining sesame oil as well. If needed, salt it again.
For the potato praline mash the potatoes, stir butter, spices, egg yolk and so much flour that you get a medium hard dough. Make small balls with floury hands, and crumb them in breadcrumb. Fry them golden-brown in deep, hot oil, and serve with the soup.
